CREATING TRENDS SINCE ’79
Jean-Maxime Delorme
A Respectful Approach to Viticulture
All the vines on the estate are certified Organic or in the process of conversion. But beyond that, JM wants his land to be truly alive, fostering a genuine synergy between flora and fauna. He doesn’t till in winter, allowing the soil and insects to thrive undisturbed. He has also planted vegetation around the vineyards to encourage harmony between species. He’s lucky to work his vines on a variety of terroirs, including lauzes (flat stone soils), sand, and rolled pebbles.
A Natural Winemaking
As a reflection of the vineyards, in the cellar, JM wishes to allow the wine to fully express the grape varieties and the terroirs. His wines are produced with indigenous yeasts. He uses as little sulfur as possible. He has his wines rigorously analyzed to avoid any deviation. Some cuvées are also vinified using carbonic maceration.
